Cheesecake is surely a gift!

Since moving here, cooking has been somewhat of an experience. I knew realised how much I took prepackaged food for granted. I never realised how much I took meat for granted as well. Here the process for picking out your chicken goes like this....you go to the market where they sell chicken, you pick out your LIVE chicken, and then who knows what happens after that. I'm not sure if you have to kill it yourself, or if the shop does it for you, but either way it's just hard for me to pick out a LIVE anything that I'm planning on eating a few days later. No wonder so many people are vegetarians here. I would be to if I had to do that.- Oh wait, I am a vegetarian thesedays!
We had a guest come to visit us a couple weeks back, and for her preperation I wanted to make a special dessert. I decided I'd try cheesecake. I'm a huge cheesecake fan and thought I would give it a try here, the only problem? We can't buy cream cheese!!! I know at this point many people are thinking..."there goes your cheesecake!" So here goes the recipe...you take natural yoghurt, a LOT of natural yogurt- like 4 kilos of the stuff, and place it in a dupatta (or a cheese cloth will do). You leave it overnight in a seive so the liquid can drain out of the bottom and the next morning? YES- yoghurt cheese, sounds gross I know, but it made a GREAT cheesecake. I think I'm going to opt for this recipe even when I go back to the states. I think it's healthier too!

You are so resourceful! I eat yogurt cheese all the time (we call it labnee in Arabic). It is really yummy, but I never thought to use it in cheesecake! Did you have to add extra sugar to it?
